I was admitted to a few different colleges and will be attending NAU in the fall. But I was also admitted to ASU and a few other colleges I won't be attending. Do I need to talk to them to decline my offer of admission? Or can I just not respond to them? I still get letters sometimes from ASU telling me to fill out housing and dinning forms and what not. Thanks.

No, If you didn't respond to the schools offer , which would include your intial deposit, by May 1st (the universal college acceptance deadline) then they already know that you are not planning to attend. In other words, sending in your deposit by May 1st is your commitment to a school.

You don't need to, and you'll eventually be dropped if you take no action with respect to whatever deadlines they have for registration/payment. However, it's a decent thing to do to notify them you are not accepting so another student can readily be placed into your vacant seat.

Yes. You do need to tell them that you will not be enrolling there. Otherwise, they will assume you plan on attending.
